In a small bowl, combine 1 cup olive oil, 1/4 cup rice vinegar, 1/4 cup sesame oil, 1/4 cup ponzu vinegar, and 2 tablespoons Bragg Liquid Amino (a concentrated protein made from soy). Add 2 tablespoons fresh ginger (minced), 1 small jalapeno (minced), and 2 cloves garlic (minced). Let the ginger marinate for a few hours (or overnight), then whisk everything together to make a dressing.

Melt 2 tablespoons ghee in a sauté pan over medium heat. Add the 2 chopped shallots and cook, stirring occasionally, until lightly browned, about 2 minutes. Add 2 cloves garlic, thinly sliced, 2 stalks celery, chopped, and 2 large carrots, chopped. Cook, stirring occasionally, for about 4-5 minutes. Then add 2 cups petite black lentils with the sauteed vegetables. Pour ginger dressing over lentil veggie bowl and top with 1/2 cup flat leaf parsley. Garnish with sliced avocado, pickled red onion, and feta cheese (all optional).
